The salty sea air doesn’t favour apple trees and so all our apples are bought from farmers in the counties of Carlow, Kilkenny, Waterford, Tipperary & Cork. We know these farmers personally and this ensures we understand the care with which these crops are nurtured and grown – a fact which is hugely important given it is our sole principal ingredient.
When the apples arrive we wash and manually sort them, removing any which we consider over-ripe or damaged. This helps us in our goal to achieve a pristine pressed juice. We add a final ingredient, a naturally cultured champagne yeast which gives the cider such a distinguished “nose” and smoothness on the pallet.

Since the 16th century there has been an old Barry Clan fortified tower overlooking the cliffs of the mystical Nohoval Cove in Co.
