Cider the traditional way…

The salty sea air doesn’t favour apple trees and so all our apples are bought from farmers in the counties of Carlow, Kilkenny, Waterford, Tipperary & Cork. We know these farmers personally and this ensures we understand the care with which these crops are nurtured and grown – a fact which is hugely important given it is our sole principal ingredient.

When the apples arrive we wash and manually sort them, removing any which we consider over-ripe or damaged. This helps us in our goal to achieve a pristine pressed juice. We add a final ingredient, a naturally cultured champagne yeast which gives the cider such a distinguished “nose” and smoothness on the pallet.

About us & our farmers…

Since the 16th century there has been an old Barry Clan fortified tower overlooking the cliffs of the mystical Nohoval Cove in Co. Cork, and today the surrounding ruins are testimony to the many things that have come and gone in the years since then. There has been one constant however, that has maintained local life throughout the centuries. This is the old stone well, a well which is in operation to this very day.
